Sweet and Sour Pineapple Soy Curls Stir Fry

One-Pot Pineapple Broccoli Soy Curl Stir Fry is an easy to make veggie & protein packed meal. This tasty stir fry recipe tastes fantastic and makes for a quick lunch. The extra carbs, fibre, and healthy fats from the broccoli make it a great lunch for days when you need a little extra to stay energized. 

 Each recipe is plant-based, vegan and gluten free. 


1 head Broccoli

3 cloves Garlic

2 tsp Ginger

1 cup Pineapple chunks, fresh or frozen

1 Red bell pepper, large

1 Red onion, small

1 Scallions, fresh

2 cups korean bbq soy curls

1 cup Sweet and Sour Sauce

2 tbsp Rice wine vinegar

1 tbsp Sesame oil

Rice or Quinoa (your desired amount)


Step 1

Add 1 tablespoon sesame oil to a deep skillet and place over medium heat, add in bell pepper chunks, onion chunks and broccoli. Cook, stirring frequently for 5-8 minutes until broccoli is slightly tender but still has a bite. Stir in pineapple and Korean bbq soy curls. Pour sweet n sour sauce over and bring to a slight simmer then reduce heat to low and cook for an additional 2-4 minutes until sauce begins to thicken.

Step 3

Serve with brown rice, coconut rice or quinoa for a healthy dinner. Garnish with scallions. Serves 4.
